Simon spent much of her artistic career in Atlanta, studying under Alice Dunbar and Hale Woodruff. She was the first African American student to graduate with a BFA from the Atlanta School of Art in 1967. She moved between painting, sculpture, and prints and often focused on quiet, contemplative scenes to express a broader political issue.
